Uyghur Style Fried Donuts: Peushkel (پۆشكەل)

This is one of the most, most, most simple to make Uyghur-style donut recipe!!!

I learned this recipe from my mother, when she told me about the ingredients, I was thinking ''Really! There is no milk, no sugar, no salt, no eggs in this recipe?!?!?'' Believe me or not it turned out perfectly!! I'm amazed hopefully you will be too😉

INGREDIENTS
To make the dough ball:
all-purpose  flour 150gr
water 70ml
yeast 2 gram

for processing the dough:
olive oil 40-50 ml
baking soda ½ tsp
a hand of flour

for frying:
olive oil 2-3 L


INSTRUCTIONS

  1. Add flour, yeast and water to a mixing bowl. Whisk and grab the ingredients to combine them.  Knead it for 10 min,  until it's smooth and there are no dry spots inside and on the surface. Cover with a damp towel or plastic wrap and set the dough aside at room temperature for at least 2 hours (up to 6 hours) allow the dough to rise until doubled in size .  (I made a blog post about How to Make Dough)

  2. To processing the dough: Gently remove the risen dough from the mixing bowl, press it between the palms to flatten it, then place it back in the mixing bowl. Sprinkle the baking soda and a hand of flour over the top of the dough. Heat up the 40-50ml oil, until you see light smoke from the pan, then pour the oil over the dough. Use a spoon to mix the dough with the hot oil, when it's cooled down, use your hands to knead it for making a smooth dough ball again. Rest for 5 minutes.

  3. Meanwhile, heat up the oil for frying the Peushkel. Heat it up thoroughly in a deep pan over medium-high heat (the oil is hot when you see light smoke from the surface of oil and when you put wooden sticks in the oil, it bubbles hard.) Turn off the fire and let the oil cool down a bit. Approximately 2-3 min, otherwise the Peushkel will burn in the hot oil. To check the right temperature for frying the Peushkel: put in the wooden chopsticks again and if it has even, light and small bubbles, the oil is ready for frying. Now turn on the smallest fire to keep the oil hot.

  4. To make Peushkel shape: take a slightly bigger than a walnut size pieces, roll it into a round ball, then roll it out with a rolling pin bring it to a round shape, thickness of 1cm, then use a knife to make two slices in the middle, this helps for better frying. Gently insert the Peushkel into the pan. Fry them evenly, for about 2-3 min. until the outsides are beautifully lightly browned. Repeat with the rest. Sprinkle some powder sugar on it as desired and enjoy freshly made warm Peushkle-doughnuts from your own kitchen!!
