How to Make Burger Patties: Uyghur Style Kebab Burger

Today I’m going to share with you a very simple and incredibly delicious kebab flavour Uyghur-style burger recipe.

It would have been perfect if I were able to make the burger patties in an outside clay oven, Tandoor :) because that’s the traditional way of making kebabs. However, these oven patties are easy to make and they give this homemade burger a surprisingly delicious kebab flavour.

😋Yield: 4 patties/burgers
🕙Cooking time: 45 min


INGREDIENTS PATTIES:
Minced lamb 200gr
White onion 1x, finely chopped
Flour 2 tsp
Sunflower/corn/olive oil 2tsp
Chili flakes 1tsp
Sweet chili pepper powder 2 tsp
Cumin 2 tsp
Salt 1 tsp
White pepper powder 1 tsp
Egg 1x

INGREDIENTS PATTIES:
Quality burger buns 4x
White onion 1x, slice thinly in rings
Ripe tomatoes 1-2, cut into round pieces
Half a head of lettuce, wash and dry it, tearing up the larger leafes
Shashlik sauce or/and Garlic sauce


INSTRUCTIONS:

  1. Add the patty ingredients to a mixing bowl. With clean hands, mix everything up well. (For better flavour, let marinate for 3-8 hours)

  2. Preheat the oven on the grill setting, at the highest setting for 10 min.

  3. To make the patties: Place parchment paper onto the baking tray. Divide the seasoned meat into 4 portions. Press and roll each between your palms into a roundish ball shape, place it on the baking tray, then gently press the meatball down into a flat, round patty, roughly 2cm thick. Place the baking tray back in the preheated oven, grill the patties at the highest level, each side for about 12 min. until both sides get some golden edges. 24-25 minutes total.

  4. In the meanwhile, lay the buns, sliced side down. Toast it lightly in a pan (or under the grill/oven) if desired. Add lettuce, thinly sliced onion rings, a slice of tomato then the patties, add a layer of Shashlik sauce or Garlic sauce then a slice of tomato to taste. place the bun tops in place. ENJOY!!

TIPS

If you don’t have an oven, grill the patties on the bbq grill or use a griddle/frying pan. Preheat the pan on high heat for 3-4 min. Cook the burger patty for 4-5 min on each side. Press it with a spatula so each side fully contacts with the pan, so it gets beautiful golden edges. Don’t press it too hard, otherwise you’ll press out the juice.
