Pan Kabap (قازان كاۋىپى)

In our Uyghur cuisine, there are quite a few of Kawap (Kabap) sorts, for instance:
زىخچە كاۋاپ /zih-che kawap/ (Skuwered Kebab)
تونۇر كاۋىپى /tonur kawipi/  (Tonur Kebab)
قازان كاۋىپى  /qazan kawipi/ (Pan Kebab)
ياپما كاۋاپ /yap-ma kawap/ (Covered Kebab)
جاڭگال قاقلىما كاۋاپ  /jang-gal qaqli-ma kawap/ (Wildness Kebab) and so on.

Kabap is eaten regularly not only at home, but it's also a very popular Uyghur street food. It's made from various meat, such as lamb and lamb organ meat, beef, chicken, duck, fish, etc.

They're seasoned with peppers, cumin and garnished with desired ingredients such as onion and egg. This Kawap recipe, I'm going to share with you, is a kind of قازان كاۋىپى  /qazan kawipi/ (Pan Kebab) it is one of the most incredibly easy, quick and delicious recipe you can make in your home kitchen!!

😋Yield: 1 serving
🕙Time: 5-8 minutes



cumin 2tsp
salt 1/2 tsp
olive oil 1 tbsp

INGREDIENTS
lamb 280gr (back leg with
a layer of fat)
red cayenne or chilli
pepper powder 2 tsp


INSTRUCTION

  1. Slice the lamb into thin (3-4 mm) sections, then cut them into desired sizes.

  2. Use the biggest fire, cover the bottom and the sides of the pan with a table spoon of oil, heat it up over high heat.

  3. When you see light smoke add the lamb, mix it shortly, brown the edges.

  4. Sprinkle a layer of salt, mix.

  5. Turn the fire down to the low heat.

  6. Sprinkle a layer of red pepper powder, mix.

  7. Sprinkle a layer of ground cumin, mix.

  8. Repeat the layering 2-4 times

  9. Serve: serve immediately on a plate or skewered. It’s a perfect topping for Polo or with Bazaar Naan. Hope you enjoy!!

TIP

*The kawap will be way more tasty if each piece has a little lamb fat in it.
* A high heated pan is important, in this way the meat edges are browned quicker and the cooking time will stay short.
* Use a deep frying pan. This will help the meat heat and cook more evenly.
